Easy Avocado & Chocolate Milk Free Cake

Do you need a dairy and milk free baking recipe for a special occasion?  This easy avocado and chocolate milk free cake recipe can also be egg free, soy free, gluten and wheat free with a bit of clever manipulation.

If you are thinking baking with avocado is rather odd and you’d rather enjoy it chopped in salads or stuffed into sandwiches, I was exactly the same until I tried this insanely tasty baking.

Obviously, dark chocolate is very much the star ingredient.   The cake still looks like cake to the important person’s little eyes.  In fact, there is no need to let your children or adults know the secret ingredient in this recipe if you don’t fancy sharing.

The moistness and creaminess of the avocado enables it to be added rather effortlessly into a free from baking recipe making it a  perfect avocado and chocolate milk free cake.  It will not disappoint little people (or adults for that matter).

To make a vegan and egg free version, substitute each egg with 1 tablespoon of ground flax or chia seeds.

Egg free tip: each tablespoon of ground flaxseeds should be whisked in 3 tablespoons of water until you achieve a gelatinous mix.

If your child can have eggs, then go ahead and use these as eggs are great for providing structure, height, colour and flavour.  The avocado in this avocado and chocolate milk free recipe does add a gorgeous creaminess that’s impressive.  The kids will love it.

How to make the avocado and chocolate milk free cake

Ingredients

170g dairy-free spread
220g brown sugar
1/2 large ripe avocado
3 large free-range, organic eggs
1 teaspoon vanilla extract
150g self-raising flour (gluten-free if required)
3 tablespoons cocoa powder (Green & Blacks Organic Cocoa)
1 teaspoon baking powder

Method

  1. Beat the dairy-free spread and sugar until creamy. Then add the avocado and beat well.
  2. Next beat in the eggs or flaxseed mixture, mixing well.
  3. Add the remaining dry ingredients, mix and bake in a pre-heated oven at 160 degrees fan or 180 degrees Celsius for 40 minutes.

Ganash/Icing for the avocado and chocolate milk free cake

Simply melt 100g of dark chocolate and spread generously over the cooled cake.

Or keep it simple and dust with icing sugar.

Cakes are high in added sugar and this baking is no different.  If you are celebrating then enjoy every bite because as easy as this recipe may be, you won’t be making it everyday.
